Ingredients

6 (6 oz) skinless, boneless chicken breast halves
6 tbsp 1/3 less fat cream cheese
6 tbsp picante sauce
6 cilantro sprigs
6 tbsp seasoned Italian breadcrumbs
Fire Wrangler Zesty Ranchero seasoning (to taste)
Avocado oil (for coating)

Directions

Preheat your oven to 350°F (175°C).
Place each chicken breast half between two sheets of heavy-duty plastic wrap or parchment paper. Gently pound the chicken to an even thickness of about ¼ inch using a meat mallet or rolling pin. Season both sides with Fire Wrangler Zesty Ranchero seasoning.
Top each flattened chicken breast with 1 tablespoon of cream cheese, 1 tablespoon of picante sauce, and 1 cilantro sprig.
Starting from the narrow end, roll each chicken breast tightly like a cinnamon roll. If necessary, use toothpicks to secure the rolls.
Lightly coat the outside of each chicken roll-up with avocado oil, then dredge them in seasoned breadcrumbs. Place the rolls seam-side down on a baking sheet that has been lightly coated with avocado oil.
Bake in the preheated oven for 20 minutes, or until the internal temperature of the chicken reaches 160°F (70°C).
Remove the chicken roll-ups from the oven, let them rest for a few minutes, then slice and serve. These flavorful roll-ups pair wonderfully with a fresh salad or your favorite side dish.
