These Trailblazer Spam Burnt Ends are a crowd-pleasing snack that combines the richness of Spam with bold BBQ flavors. Serve them as an appetizer, or make them the star of your next BBQ feast!

Trailblazer Spam Burnt Ends

Ingredients

  • Canned Spam

  • Fire Wrangler Trailblazer Pitmaster Rub (or your favorite BBQ rub)

  • Favorite BBQ Sauce (we recommend Head Country)

  • Favorite pepper glaze (we use Kosmos Peach Jalapeno, or substitute with honey blended with candied jalapenos)

Directions

  1. Prepare Spam: Remove the Spam from the can and cut it into 1.5-inch cubes.

  2. Season: Place the cubes in a pan or on a cooling rack. Generously season all sides with your favorite BBQ rub.

  3. Smoke: Preheat your smoker to 250°F (120°C). Place the Spam cubes indirect on the smoker, allowing them to cook until they develop a rich color and begin to darken (approximately 60 to 90 minutes). Add pecan wood chunks to the charcoal for an extra layer of flavor.

  4. Warm BBQ Sauce: After 30 minutes, place a pan of BBQ sauce in the smoker to warm up.

  5. Prepare Glaze: After 60 minutes, mix the pepper glaze and 1 tablespoon of rub into the warmed BBQ sauce and stir well.

  6. Toss in Sauce: Once the Spam cubes have developed color, transfer all the cubes to a pan and toss them in the sauce glaze, ensuring all sides are thoroughly coated.

  7. Finish Smoking: Return the pan to the smoker and allow the cubes to smoke for an additional 20 to 30 minutes, or until the sauce thickens and adheres to the Spam cubes. The final result should be sticky and slightly tacky.

  8. Serve: Remove from the smoker and let cool slightly before serving. Enjoy these delicious burnt ends straight from the pan or as part of a BBQ spread!
