Smoked Trailblazer Sausage Sliders

Ingredients

  • 1 lb ground breakfast sausage (or any flavor of your choice)

  • 4 tablespoons Fire Wrangler Trailblazer Pitmaster Blend

  • ½ cup BBQ sauce

  • ¼ cup pepper jelly (can substitute honey)

  • Cheese (brie or cheddar are great choices)

  • 8 buttermilk biscuits

Directions

  1. Roll the whole log of ground sausage in the Fire Wrangler Trailblazer Pitmaster Blend until it is completely coated.

  2. Preheat your smoker to 250°F (120°C). Place the sausage log in the smoker and cook until the internal temperature reaches 140°F (60°C)

  3. While the sausage is smoking, warm up ½ cup BBQ sauce and ¼ cup pepper jelly in a small saucepan until combined.

  4. Brush the warm sauce mixture over the sausage log and continue cooking until the internal temperature hits 145°F (63°C) and the sauce sets.

  5. Remove the sausage from the smoker and let it rest for 15 minutes. Slice the sausage into 1-inch thick pieces.

  6. Place a slice of cheese on each sausage slice and return them to the grill (or smoker) until the cheese is melted, similar to a cheeseburger.

  7. Slice the warm buttermilk biscuits in half. Place a sausage slice with melted cheese inside each biscuit. Spoon additional pepper jelly on top of the sausage before closing the biscuits.
